To hide stems, one way the Finale manual recommends is:
Special tools
Customer stem tool
Select notes
Open Shape Selection
Create
Ok + ok

That gets rid of them. Now how do you bring them back?

On Windows, when in the Custom Stem Tool, select the handle and press backspace. I'm not sure how to do it on a Mac. Or, use Jari's JW Change plugin to do it.

Delete on a Mac.

I forgot that they both work on Windows. Either Backspace or Delete.
