There is an option (right clicking) to align smart shapes horizontally.
Is there a way to do this with dynamics and text?

Yes there and it aligns everything. Perfect Layout plug-in.

I have come to the conclusion that if you use TG Tools align dynimacs at all you would benefit from Perfect Layout. It isn't exactly 'perfect' but it is close and will only get better (I hope).

For dynamics, there is a plug-in : TGTools -> AlignMove dynamics.

Additionally, the full (paid) version of TG Tools has more options for the Align/Move plugin than are in the version that comes with Finale. Chief among these are hotkeys to trigger the various align options. Trigger these hotkeys with a macro, and you have a very powerful timesaving tool. Look at this:

Good to know about the TG Tools, waiting for the Perfect Layout plugin but I don't think it's out for Mac yet.

Is there anything for text?

These are basic tasks that should definitely be built into Finale.

PL does text. You would be far better off buying PL over the paid version of TG Tools, IMHO, of course.

If you use Finale's built-in Expression categories you will come close to what you want. Just make up separate categories for different placement needs and the expressions entered using those categories will appear in alignment automatically, with no plugins needed.

For instance, the picture below shows the category settings for text placed 1 space above the staff and 1 space before the note to which it is attached - a common placement found often.

Sorry, I am a Windoze user so I don't know but I am sure if you jump on their website it will tell you. PL will not replace the text assignment suggested in the post above. It will however place everything, mostly, where it looks nice. They will do a score for you for free so you can tell if it is for you. But like I say, if you are a person that uses TG Tools align dynamics you will benefit from PL.
