Can the Hollywood (enlarged) time signatures be done only on a few select measures in the middle of a composition? I can only get them to work on the ENTIRE score and I only want them on a few different time signatures. TIA

I would just do them as expressions.

Select the measure where you want the time signature to appear > right click on it > Measure Attributes > Time Signature / Always Show. This will show the time signature at that measure on all the staves you have chosen to show a time signature. If you then want it NOT to appear on certain staves, apply a staff style to that staff/measure that has "Times signature" unchecked

I should clarify - I still want the "normal" time signatures in the rest of the score. There are just a few times I'd like to have the Hollywood time signatures in the middle of the score.

Hence, my suggestion to do it as an expression!

Keep in mind that if it signifies a TS change, you will have to change it in the score as usual, and hide the “normal” signature.
