Is it possible to have a slur that is below a group of notes then swoops above another group of notes beamed in the opposite direction? (or vice versa). One continuous slur rather than 2 separate ones.

Here's an example from a Ravel piece. I was able to do it (somewhat) in Finale by contorting a single slur but it was clunky and not stable when adjusting things.

Draw the slur as normal, from the first to the last note. Then, click on the slur, and use the control points (5 small handles) to reshape the slur. Save it until the last steps of layout.
