That’s what I’ve done. You can set it as a single line staff, or even a no line staff, and notate it with x-noteheads.

You could do it in one staff, too. Put the handclaps in another layer and change their noteheads to X (an easy way is to use the JW Change plug-in, which can do it per layer)

If you need playback of handclaps on a Vocal staff, that requires some trickery. But the look is easily achievable. You might want to mute playback of the handclap notes.
