I have a basic template I use for all my starting points when hired for jobs.

The basic text fonts are Broadway Copyist.

If a client wants to see a different font for text blocks, lyrics, etc ... whats the best way to do that? Opening each file and changing each text block and lyric etc is so exhausting.

What's a better way to still be able to use my expressions/dynamics/spacing/etc but be able to choose or switch different fonts and looks?

In all the years I've used Finale, I've only used my own templates and just used "New Document from Template" and navigated to my own templates folder.
Finale v26, Digital Performer 9, ProTools 12. Mac.

Have a look at Document/Set Default Music Font. That also changes the font for expressions, etc.

Check out this installation guide from the music type foundry.

Under the section: "Changing the Music Font in Finale", you might find what you need.
