I use dark mode for quite a few apps on my mac (such as Mail) and I find it helps my eyes. Basically, it's white text on a dark background.
I just had a finger poke with Finale's view menu settings and palettes/background textures etc, but it seems that one can't change the colour of the staves, although you can change pretty much everything else.

Well, apart from Mail (and an option in TextEdit), the contents of most document windows still stay black on white: e.g. in Safari, Pages, Word, Preview, etc.
You can simply invert the video of the entire display with Command Alt CTRL 8, but it take some getting used to. It's a bit like working with an engraved plate (except it's not all backwards!)
Usually, reducing the colour of the 'paper' to a beige-y shade in Finale's prefs takes the edge of the glaring white.
