In older files brought in to 25 or 26, some fonts get changed to PinFang SC which I assume to be Chinese. For instance, in the Repeat Designer “Fine” and “D.S. al Fine” get changed to Chinese characters and I can’t change them to English unless I delete and re-enter. In cases like I just described that’s not a big deal, but sometimes a long text expression gets changed and I can’t remember what it was originally. (I know, I know, I should have PDF backups of everything.) I have tried to delete the font from my system but it cannot be deleted; I assume it is a system font or something like that in China. Likewise, if I copy the text and move it to a word processor, the font can’t be changed there either. Has anyone run into this problem and found a solution?

Shouldn't the font utility do the trick? Replace PinFang SC with Maestro or Engraver or whatever font you're using.
Running Finale 25.4.1.163 in OS X 10.11.6

You would think that would work, but it doesn't. PinFang is a very stubborn font.
