In case anyone is wondering, I've used Finale 26 on macOS 10.11 Big Sur (beta) for about 6 hours working time now and have not found any issues (well, I should say, no issues that were not also present in previous macOS versions  ) Even HyperScribe works. The crash which always occurred in Finale 25 when entering an accented character by hitting the option key first has been fixed.

That's good news!
How about 3rd party plug-ins? Do they also work?
In another thread there were concerns about them not working:

I, too, have upgraded to Big Sur. My only problem so far is not being able to use the keys: command-z to go back to an early time. Do you have the same problem and if so, how did you correct it?

I figured out how to delete. I had to go into preferences.
