Pipe organ dynamics

Why is there only one kind of organ in Finale? And why don't dynamics work on playback? (I did a search here first and didn't see anything helpful).
There are several organ sounds in GIfF. I think that there is an issue with dynamics using Velocity. You might try changing the Volume instead.
