Say I want to type Dolénte. On mac, for the accented E it's option+E then E. But in Finale, as soon as I hit option-E it quits. ???

I've just typed option e to get ´ in both the Text Tool and the Lyrics Tool on Mac OS 10.14.6 with Finale 26.3 and it worked as expected.

This suggests that there may be something in your system or in your specific file that is confusing things, but I'm unable to guess what that may be. This may be a question for MM tech support if no-one here can help.

In the meantime, what about typing it in a word-processing application and then copying and pasting?

You should also try the “long press” on the Mac. Hold down the e key for a couple of seconds, and you will get a flyout with about six accent choices. Enter the number of the one you want.
