I'm still not sure what you're objecting to. "It sounds unnatural." Quantization is for getting Finale to notate what you're playing. Unless you're a machine, you can't play precisely in time. Below I recorded four bars of "Twinkle Twinkle Little Star," first with quantization set to a sixteenth note, then set to a 64th note. With "no quantization" it would be even worse.
If you mean you're hearing rubato playback, uncheck "Record continuous data" on the Hyperscribe menu.

Window menu > Playback Controls
In the Playback Controls, click on the lower left corner, to expand the window.
In the expanded window, use the pop up menu Human Playback® Style to set Human Playback to None.

I believe I'm looking at the correct window (Human Playback), and nowhere do I see the word "None." See attached screen shot.

Did you try my suggestion of turning off "Record continuous data" in the Hyperscribe menu? I suspect that's your real problem (nothing to do with quantization, by the way).
Peter's directions are for the Mac. But from the very useful manual:

OK, it appears your suggestions are working now. You have "standard" playback circled on the photo, but I presume you meant change "standard" to "none."
Which I did.
