On this one I have a bit much too space between staves and between systems, resulting in a fourth page
with only two systems. I know how to reduce these spaces individually but how do I do it for all
the staves and systems? Thanks.

For the staff spacing I would switch to Scroll View, and adjust the staff spacing there:
Staff Tool.
Staff menu > Staff Usage…
Then, switch to Page View.
Staff menu > Respace Staves…
Choose the last option: Set to Scroll View Spacing
For the system spacing:
Page Layout Tool.
Click on System 2, to select it.
Page Layout menu > Systems > Edit Margins…
You get to the dialog box Edit System Margins.
(or get there faster via the context menu)
Set the System Range to System 2 Thru 18.
Choose a lower value for the Distance Between Systems.
Staff Tool.
Staff menu > Staff Usage…
Then, switch to Page View.
Staff menu > Respace Staves…
Choose the last option: Set to Scroll View Spacing

I'm working on the first part of your response (staff spacing), which I don't fully understand.
Specifically, why switch to scroll view and then back to page view without having
done anything in scroll view? Then, having gotten to "Set to Scroll View Spacing" what should I do at that point? When I tried to narrow the spacing from there, it only affected that system, not the others. So I don't get it. Going back to my original question - is there a simpler method? In other words, to adjust the spacing within one system, I drag the handle of the bottom staff until it reaches the desired spacing. OK. But is there another key that I could press that would make the same adjustment globally?

Click in the first measure with the staff tool. Hold down the shift ley, and tap the “end” key. This will select that staff all the way to the end. Grab the handle, and drag up. That staff will move in all systems.

Seriously, spend the bucks and buy the Mac extended keyboard. It's amazing how often I go to those buttons.

On the smaller Mac keyboard, if you hold down both 'fn' and 'shift' while pressing the right arrow it should behave as the 'end' key. (In Finale and some other applications, but not in all.)

And it's wired ("a wireless keyboard or mouse is a solution to a problem that doesn't exist" - a computer expert I read on a music forum).

Or: in page view, staff tool, click in front of the staff (regardless which page) you wish to select. It will select that staff throughout the piece. If you instead click the staff handle, it will only select that staff on that particular page.
As in the Finder: shift-click to select adjacent staffs, command-click to select staff that aren't adjacent.
