In Preferences, I have Autosave set for every 5 minutes, and "Make Backups" enabled. But Finale autosaves every minute or so when I am editing or entering notation (the time stamp of a document in Windows File Manager shows when the open file was last saved).
I would like have Autosave enabled but not interrupt my work every minute when editing. Has anyone experienced this annoying problem and found a fix?

Or maybe turn it off and back on.
You might time it to see if it really is every minute; I'm not sure how you're comparing file timestamps since it overwrites the same .asvx file every time.
It is indeed disruptive when it runs, especially with a large file. I've got it set to 15 or 20 minutes, something like that. I rarely get crashes, but I appreciate Autosave when I do.

Yes, restart and refresh often fix a variety of issues.
I timed autosave and found that it does not work, unless I am actively working in the document, and then only randomly and too frequently. In Windows File Manager, I have "Date Modified" enabled; so I can see the precise date and time of each *.asvx file.
If rebooting the PC can fix a problem, it intimates that Finale is not fully compatible with Windows.
My guess is that file conversion is the cause of the problem I describe because it seems that only those documents that were originally created in v2012 are affected.
