One way is to use the plug-in "Change to Real Whole Rest" and then you can use Speedy to select the rest and hide it with an H.

Wouldn't it be more consequent to hide all the rests, not just some of them?

For a single instances, use speedy to enter a real whole rest in the empty measure and then hide it by pressing H. That technique works for other rest values as well.
