Hy!
My question is kind of easy... But how can I change the size of the score? (I mean, if I start with 16 staff, the whole document is smaller, but if I start with 3-4 staff, everything is larger in the document) So I want to reduce the size of my document (which have only 7 staffs).

The resize tool (its icon is : %) offers the possibility to resize a whole score, a whole system or specific staves or even notes. (Click between staves, or on a staff or on a note)
If you need different sizes for different systems in the score, it is possible : you just apply the size modification to a range of systems.

...With the Resize Tool you can also resize everything proportionally, including page assigned text blocks:
