My question is very simple and the solution should be possible by a normal capability.
I want to change the speed for a ritard and I checked the manual and it's just not clicking or I'm on the wrong thing. I don't know. I want my rit. to slow down more. How do I do that?

Put a target tempo expression where you want it. Finale should smoothly work up or down to that tempo with a rit. or an accel.
You can hide the expression, if you don’t want it to print.

Ah, yes, this makes sense because it does the same thing with crescendos/decrescendos and regular dynamic markings. Thank you!
