I'm not sure how to search for this - on Finale 2003's Help or on this forum - and I'm desperate to change the "piano" sound to a choir sound in order to hear sustained chords as I compose, can anyone tell me where to find the option? I can't for the life of me find it.

You mean, that you want to still have the piano sound, but with the choir, or just the choir?

Window menu - Instrument List
You can view the Instrument List by staves, or by instruments.
When viewing by staves, you can set playback individually for each layer, and for the chord symbols.
You can create a new "instrument".
If you use more than one instrument in your score, you might like to assign each instrument to its own channel; instruments that share the same channel aren't independent.
Note that different instruments can use the same playback sound - that's OK as long as they are on different channels.
