still puzzled - quantization

I think it records the imperfections in the MIDI data and plays them back, but if you're too far off the beat then you might get fractions of 64th notes and that sort of thing. But why not just try it?

Of course I'm willing to try. But so far I've only got my playing "corrected" to 64ths, and to me the result sounds unnatural. I happen to like my imperfections. If you can show me how to get it to playback w/o any quantization that would be great. If not, fine. But that might mean that Finale simply can't do it. Since it's not a sequencing program. Like Cubase. But I hated Cubase cause it couldn't do what Finale does.

Well, Finale's goal is notation. You probably don't want your rubato playing notated literally. I thought Finale would play back what you played regardless of quantization. Make sure all these playback things are checked.

I'm not sure what you are trying to achieve. If you want to have something to listen to your handiwork then hook up the keyboard to Audacity and record it.
I'm not surprised at your result with Finale - most people want to try and fix up their imperfect timing with quantization so the notation isn't a dog's breakfast of various note lengths at various intervals off the beat.
Why not setup Finale to produce a reasonable notation score and then write something like "Very Freely" at the top. Gives you a readable record of your composition and it will get played in the manner you wish to interpret it at the time.

I think--but I'm not positive--that if you record with Hyperscribe with quantization set to a reasonable value so you don't get fractions of 64th notes, Finale with nevertheless save your original performance data and play that back, provided the playback options shown above are checked. Why don't you try it?

I did try the playback options you suggested, and I appreciate your suggestion, but the result was awful in my humble opinion.
Whether Finale is saving the original performance data or not, it is simply not playing it back exactly as I played it. My ears are not fooling me. I do not see any playback options in Finale that say, in effect, "no quantization."

Again, quantization is for rendering what you play in reasonable music notation, not for playback. You've seen what a mess results if you set it to the smallest possible value, so "no quantization" is likely not what you want.
